Our company is an industrial business that makes biscuits and chocolate. It has a modern production facility that is constantly being developed, designed to meet the demands for quality, consistency, and industrial performance.

Job :

As part of the development of our factory specialized in making biscuits, filled products, and chocolate-coated products, we are looking for a Research & Development Manager - R&D Biscuits.

Main tasks

Reporting to General Management and working with the Production, Quality, Purchasing, Marketing, and Maintenance teams, the R&D Manager will have the following main tasks:

* Develop new recipes for biscuits, cookies, filled products, sandwiches, and coated products.
* Improve existing recipes in terms of taste, texture, appearance, shelf life, and consistency.
* Conduct laboratory tests and support industrial tests on production lines.
* Ensure the transfer of recipes from the laboratory stage to industrial production.
* Define technical manufacturing parameters: mixing time, temperature, equipment speed, baking, cooling, filling, and coating.
* Develop and update recipe sheets, technical sheets, and manufacturing standards.
* Determine standard raw material consumption and expected yields.
* Participate in reducing material waste and optimizing production costs.
* Research and test alternative raw materials to improve quality or reduce costs.
* Work on optimizing the weight, dimensions, moisture, texture, and shelf life of products.
* Analyze product defects encountered in production and propose corrective actions.
* Provide daily technical support to production teams during startups, recipe changes, and manufacturing incidents.
* Participate in the qualification of new suppliers and new raw materials.
* Collaborate with the Quality department to ensure regulatory, health, and documentary compliance of new products.
* Prepare samples and prototypes for internal tests, customer tests, and consumer studies.
* Stay informed about new trends, ingredients, processes, and innovations in the biscuit sector.
* Participate in projects for the installation and startup of new production lines or equipment.

Required profile :

* Degree in food engineering, food industry engineering, or equivalent.
* Experience desired in the biscuit, chocolate, confectionery, industrial bakery, or cereal product sector.
* Good knowledge of raw materials used in biscuit making: flour, fats, sugar, cocoa, starches, milk powders, leavening agents, flavors, and emulsifiers.
* Good command of mixing, forming, laminating, baking, cooling, filling, and coating processes.
* Ability to conduct industrial trials and analyze results.
* Proficiency in computer tools and tracking spreadsheets.
* Good analytical, organizational, and problem-solving skills.
* Rigor, creativity, autonomy, and a strong on-site presence.
* Ability to work collaboratively with multiple departments.
